Amelia,

I love that you gave us some history about eggplant. I bet some shrimp and a pat or two of butter would add another version to your wonderful dish.

Very good work! I met Ariel at a delicious wine tasting at Ceja Vineyards. I am so happy to see this project come to fruition, and I can't wait to try the salsa! Congratulations!
